So it begins! I had a chat with Mother Nature a little while back and I was like, “You know MN, if you actually get the temperature down under 90, I’ll totally make my Green Chili Stew.” It took about a month, but she finally caved in!
Now this is my absolute favorite comfort dish. It’s the one thing I make over and over (mostly) the same. And because of that I don’t have measurements for this recipe 😂 but it’s the same ingredients, cooked in the same order. The only thing that changes is how I cook it. Today I went with my old school French pressure cooker, but this works just as well in an Instant Pot, a Crock-Pot, or even a Dutch oven. Your call!
- Pork shoulder, cut up for stewmeat
- Yellow onion, diced
- Hatch Green Chilis, roasted and diced
- Potatoes, diced
- Chicken bouillon
In batches, brown the pork with some salt and pepper. While it’s browning, prep the rest of your ingredients.
Add in the onions and chopped garlic, sautée for a few minutes then add the browned pork back in and toss in the Oregano. Now add in the potatoes, chilis, hominy and bouillon. Add enough water to just more than cover all the ingredients. Set the lid and cook until done.
Now if you go the pressure cooker/Instant pot route, it will tell you when it’s done. Crock-Pot, I advise 8 hours for maximum flavor and tenderness. For the Dutch Oven same deal, low and slow. I personally can’t stand the torture of how good it smells all day, so pressure cookers are my suggestion.
